Im using mirroring and log shipping on sql server 2012, i will move my hadr solution to always on. Any service interruption or need restart during configuration always on ,so how many time block access to the
my production Sql server ?

This would depends if you already have the basic setup. By basic, I mean the MS cluster, if you already got clustering setup, and the SQL instance already turned on always on, then the change does not require any downtime (you will lose your DR/mirror during the setup).
However, if you are new to it, then you would expect an outage required, you do need to setup cluster for those nodes, and ensure that SQL instance enabled always on, which both setting require restart of the server/sql service.
